Carbonic maceration is often used in the Beaujolais region in France, and is the method employed to make the Whole Cluster Pinot Noir. Hand harvested whole clusters are placed in a chilled stainless-steel fermenter, and CO2 is pumped into the tank to remove the oxygen. As a result, the Pinot Noir berries burst with aromatics and pure fruit flavors. Juicy, lush flavors of strawberries, raspberries, spring flowers, and sweet herbs.
