Cristom Rose 2021
This rosé is made up of Pinot Noir from the Eola-Amity Hills estate. The grapes were hand-harvested and hand-sorted before being pressed in a pneumatic bladder press after 15 minutes of skin contact. They then see 75% native yeast fermentation before aging in neutral French Oak barrels for 4 months. The finished product is lightly fined with Bentonite and filtered. Aromatically the wine is driven by bright red berry fruits as well as a fresh, brambly greenness. On the palate, the wine has tart raspberries, summer herbs, and delightfully mineral-driven acidity.
