The Bellini was invented sometime between 1934 and 1948 by Giuseppe Cipriani, founder of the famous Harry's Bar in Venice, Italy. He named it after a Venetian artist who painted a picture of a pink-shirted saint, which turned out to be about the same color as the drink. This cocktail consists of pureed white peaches and sparkling Italian wine (Prosecco). Today, this is the most famous cocktail in the world. Best served chilled, as an aperitif, and excellent for brunch.
