Champagne can only come from the small Champagne region northeast of Paris. The grape varieties used are Pinot Noir, Chardonnay and Pinot Meunier, and the wine undergoes a second fermentation in the bottle, giving it its bubbles. This bottle fermentation is called the “Champagne method” and many of the world’s sparkling wines are made this way, including Spain’s Cava and most American bubbly.

Another popular method to produce bubbles is to conduct that secondary fermentation in tank, a process known as Charmat method. Major styles of Champagne are brut, or dry; sec, slightly off-dry; demi-sec, slightly sweet and moelleux or doux for very sweet.
